Vegan Salted Toffee Squares

Rich, buttery toffee bars topped with melted dairy-free chocolate and flaky sea salt. Simple to make with just a handful of ingredients, and they taste like a classic holiday treat without any eggs or dairy.

Ingredients

  • 1 cup vegan butter, softened (such as Country Crock Plant-Based)
  • 1 cup light brown sugar
  • 1 tbsp unsweetened applesauce
  • 1 1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 8 oz dairy-free chocolate chips
  • 1 tsp flaky sea salt

    Make the toffee base

    Preheat the oven to 350F (175C). Lightly grease or line a 13x9-inch baking pan with parchment paper. In a mixing bowl, beat together vegan butter, brown sugar, applesauce, and vanilla until light and fluffy (2-3 minutes).

    Press and bake

    Add flour and salt; mix until the dough begins to pull away from the sides and forms a soft ball. Press the dough evenly into the bottom of the prepared pan. Bake 20-25 minutes, or until lightly golden brown at the edges.

    Add the chocolate layer

    Remove from the oven and immediately sprinkle the dairy-free chocolate chips evenly across the surface. Let them sit 2-3 minutes to melt, then spread into an even chocolate layer with an offset spatula.

    Finish and cool

    Sprinkle the sea salt evenly over the melted chocolate. Cut into squares while still warm for clean edges, then allow to cool completely so the chocolate sets.
