Salted Chocolate SunButter Blondies
Chewy, gooey blondies made with SunButter and studded with dairy-free chocolate chunks, finished with flaky sea salt. Completely nut-free, dairy-free, and egg-free but outrageously good.
Ingredients
- 1/2 cup SunButter
- 1/3 cup neutral oil (like avocado or light olive)
- 1/2 cup brown sugar, packed
- 1/4 cup cane sugar
- 1/4 cup unsweetened oat milk (or any plant milk)
- 3 tablespoons unsweetened applesauce
- 1 1/2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp fine salt
- 1 cup all-purpose flour (use 1:1 GF blend if needed)
- 1/2 cup dairy-free chocolate chunks or chips
- Flaky sea salt, for topping
Instructions
- 1Mix the wet ingredients
Preheat oven to 350F (175C). Line an 8x8 inch pan with parchment. In a large bowl, whisk together SunButter, oil, brown sugar, cane sugar, oat milk, applesauce, and vanilla until smooth and glossy.
- 2Add dry ingredients
Add baking soda, salt, and flour. Stir until just combined. Fold in chocolate chunks, saving a few for the top.
- 3Bake
Spread batter into prepared pan. Top with extra chocolate and a sprinkle of flaky sea salt. Bake for 22-25 minutes, until golden at the edges and just set in the middle.
- 4Cool and serve
Let cool completely before slicing into squares.
