Egg-Free, Dairy-Free Chocolate Chunk Cookies

Soft, chewy chocolate chunk cookies made without eggs or dairy using simple pantry ingredients. One bowl, no chill time, and they come out bakery-style tender every time.

Ingredients

  • 1/2 cup neutral oil
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1/4 cup coconut yogurt or unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup dairy-free chocolate chunks (or chips)

    Mix the wet ingredients

    Preheat the oven to 350 F (175 C). Line a baking sheet. In a bowl, whisk oil, brown sugar, and sugar until glossy. Whisk in yogurt and vanilla.

    Combine the dough

    Stir in flour, baking soda, and salt until just combined. Fold in chocolate chunks.

    Scoop and bake

    Scoop 2 tbsp dough balls onto the tray, spacing well. Bake 10-12 minutes until edges are set and centers look slightly underdone.

    Cool and serve

    Cool on pan for 5 minutes, then transfer. They firm up as they cool -- pulling them early is what keeps them soft.
