Egg-Free, Dairy-Free Chocolate Chunk Cookies
These chocolate chunk cookies are one of those classic recipes that never last long in our house. They are soft, chewy, and get eaten quickly every time I make them. They are made with simple pantry ingredients, come together in one bowl, and do not require any chill time. The cookies bake up bakery-style tender with melty chocolate chunks throughout. They are completely egg-free and dairy-free, and work well for an easy, reliable cookie recipe when you want something simple that still feels like a treat.
Ingredients
- 1/2 cup neutral oil
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1/4 cup coconut yogurt or unsweetened applesauce
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup dairy-free chocolate chunks (or chips)
Instructions
- 1Mix the wet ingredients
Preheat the oven to 350 F (175 C). Line a baking sheet. In a bowl, whisk oil, brown sugar, and sugar until glossy. Whisk in yogurt and vanilla.
- 2Combine the dough
Stir in flour, baking soda, and salt until just combined. Fold in chocolate chunks.
- 3Scoop and bake
Scoop 2 tbsp dough balls onto the tray, spacing well. Bake 10-12 minutes until edges are set and centers look slightly underdone.
- 4Cool and serve
Cool on pan for 5 minutes, then transfer. They firm up as they cool -- pulling them early is what keeps them soft.
