Ingredients
- For the cookies: 1 1/2 cups all-purpose flour
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/3 cup dairy-free butter or coconut oil, softened
- 1/2 cup brown sugar, packed
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 2-3 tbsp dairy-free milk (soy, oat, or rice), as needed
- For the maple glaze (optional): 1/2 cup powdered sugar
- 1-2 tbsp maple syrup
- 1-2 tsp dairy-free milk
Instructions
- 1Prep and mix dry ingredients
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- 2Make the dough
In a large bowl, beat dairy-free butter and brown sugar until fluffy. Add maple syrup and vanilla, mixing until smooth. Gradually mix in dry ingredients. Add dairy-free milk 1 tbsp at a time until the dough is soft but not sticky.
- 3Shape and bake
Scoop 1-2 tbsp dough, roll into balls, and lightly flatten. Bake for 10-12 minutes, until the edges are lightly golden. Do not overbake -- centers should remain soft.
- 4Cool and glaze
Let cookies cool for 5 minutes on the pan, then transfer to a wire rack. Drizzle maple glaze over the top if desired.
