Ingredients

  • For the cookies: 1 1/2 cups all-purpose flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/3 cup dairy-free butter or coconut oil, softened
  • 1/2 cup brown sugar, packed
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 2-3 tbsp dairy-free milk (soy, oat, or rice), as needed
  • For the maple glaze (optional): 1/2 cup powdered sugar
  • 1-2 tbsp maple syrup
  • 1-2 tsp dairy-free milk

Instructions

    Prep and mix dry ingredients

    Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.

    Make the dough

    In a large bowl, beat dairy-free butter and brown sugar until fluffy. Add maple syrup and vanilla, mixing until smooth. Gradually mix in dry ingredients. Add dairy-free milk 1 tbsp at a time until the dough is soft but not sticky.

    Shape and bake

    Scoop 1-2 tbsp dough, roll into balls, and lightly flatten. Bake for 10-12 minutes, until the edges are lightly golden. Do not overbake -- centers should remain soft.

    Cool and glaze

    Let cookies cool for 5 minutes on the pan, then transfer to a wire rack. Drizzle maple glaze over the top if desired.
