Easy Dairy-Free S'mores Bars (Egg & Nut Free)
Nothing says summer like gooey s'mores, but you don't need a campfire to enjoy those classic flavors. These dairy-free, egg-free and nut-free s'mores bars have a buttery graham cracker crust, a layer of melted dairy-free chocolate, and golden toasted marshmallows baked right on top. They're simple to make, perfect for parties or family movie nights, and every bite tastes like summer.
Ingredients
- 2 cups graham cracker crumbs
- ¼ cup brown sugar
- ½ cup melted vegan butter
- 1½ cups dairy-free chocolate chips
- 2 tablespoons dairy-free milk
- 2–3 cups dairy-free mini marshmallows
Instructions
- 1Prepare the Crust
Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment paper. Pulse the graham crackers into fine crumbs. Add the brown sugar and melted vegan butter and pulse until evenly combined. Press firmly into the prepared pan. Bake for 8–10 minutes until lightly golden.
- 2Melt the Chocolate
Combine the dairy-free chocolate chips and dairy-free milk in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth. Spread evenly over the warm crust.
- 3Add the Marshmallows
Sprinkle the mini marshmallows evenly over the chocolate, pressing lightly so they stick. Return to the oven for 8–10 minutes, until the marshmallows are lightly golden.
- 4Cool and Slice
Allow the bars to cool completely. Refrigerate for 20–30 minutes if needed for cleaner slices. Lift from the pan using the parchment paper and cut into 16 squares.
Store covered at room temperature for up to 2 days or refrigerate for up to 4 days. Enjoy at room temperature or warm for a few seconds in the microwave for extra gooey marshmallows.
