Cinnamon Sugar Sheet Pan Bars
This cinnamon sugar snack cake disappeared fast in our house. All of my kids loved it, and it barely made it past the first day once it was sliced. It is soft, snack-cake style, with warm cinnamon sugar flavor in every bite. Everything comes together in one bowl with simple pantry ingredients, which makes it an easy bake for busy days. It is completely dairy-free, egg-free, and nut-free, and works well for an after-school treat, quick dessert, or something easy to share when you do not want a complicated recipe.
Ingredients
- For the bars: 1/2 cup neutral oil (avocado or canola)
- 3/4 cup granulated sugar
- 1 cup dairy-free milk (oat or soy)
- 1 tbsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- For the topping: 2 tbsp granulated sugar
- 1 1/2 tsp ground cinnamon
Instructions
- 1Preheat and prep
Preheat oven to 350F (175C). Line a 9x13 pan with parchment, leaving overhang for easy lifting.
- 2Mix the batter
In a large bowl, whisk together oil, sugar, dairy-free milk, and vanilla until smooth. Add flour, baking powder, and salt. Stir just until combined -- don't overmix.
- 3Top and bake
Spread batter evenly into prepared pan. Mix cinnamon and sugar together and sprinkle evenly over the batter. Bake for 22-26 minutes, until set in the center and lightly golden at the edges.
- 4Cool and slice
Cool completely before lifting and slicing into bars.
