Savory Mushroom & Lentil Hand Pies

Ingredients

  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 2 cups mushrooms, finely chopped (cremini or button)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 1 tablespoon tomato paste
  • 1 cup cooked green or brown lentils
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon nutritional yeast (optional, adds savory depth)
  • 2 1/2 cups (300g) all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon dried thyme or rosemary (optional)
  • 1 cup (226g) cold dairy-free butter, cubed
  • 6-8 tablespoons ice water
  • 1 teaspoon apple cider vinegar or lemon juice

Instructions

    Make the pastry dough

    In a large bowl, whisk together flour, salt, and herbs if using. Add cold, cubed dairy-free butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs with some pea-sized bits of butter remaining. Drizzle in the vinegar or lemon juice, then add ice water 1 tablespoon at a time, gently mixing until the dough comes together. Avoid overworking. Divide in half, flatten into disks, wrap tightly, and chill for at least 30 minutes.

    Cook the filling

    Heat olive oil in a skillet over medium heat. Add diced onion and sauté until soft and golden, about 5-7 minutes. Add garlic, mushrooms, thyme, paprika, salt, and pepper. Cook until the mushrooms release their moisture and start to brown, about 8-10 minutes.

    Finish the filling

    Stir in tomato paste and cook for 1-2 minutes. Add lentils, balsamic vinegar, and nutritional yeast if using. Stir to combine, taste and adjust seasoning. Remove from heat and let cool slightly.

    Assemble the hand pies

    Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Roll out the pie dough on a lightly floured surface and cut into circles or rectangles about 4-5 inches across. Spoon 2-3 tablespoons of filling onto one side of each piece. Fold over to enclose the filling and press the edges with a fork to seal.

    Bake

    Place hand pies on the baking sheet. Brush tops with oat milk and sprinkle with flaky salt or seasoning if desired. Cut a small steam slit in each. Bake for 25-30 minutes or until golden brown and crisp. Cool slightly before serving.
