Rich Tofu Bolognese

This tofu bolognese is proof that a plant-based meal can be just as rich, hearty, and satisfying as the classic version. Crumbled tofu creates a surprisingly “meaty” texture, while a slow-simmered tomato sauce layered with garlic, herbs, and a touch of balsamic brings depth and warmth to every bite. Ingredients

  • 14 oz firm tofu, pressed + crumbled
  • 3 Tbsp olive oil
  • 1 medium onion, finely diced
  • 2 carrots, finely diced
  • 4 cloves garlic, minced
  • 2 Tbsp tomato paste
  • 14 oz crushed tomatoes
  • 1 c vegetable broth*
  • 1 Tbsp soy sauce or tamari
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • 1 tsp balsamic vinegar
  • Salt + black pepper, to taste
  • 14 oz pasta of choice
  • Optional: Fresh parsley + Toasted breadcrumbs to garnish

Instructions

    Press + Crumble Tofu

    Wrap tofu in a towel and press for at least 10 minutes. Crumble into rough, uneven pieces (like ground meat).

    Brown the Tofu

    Heat 2 Tbsp olive oil in a large pan over medium-high heat. Add tofu. Stir and cook until golden. Season lightly with salt + pepper. Remove and set aside.

    Build the Flavor Base

    Add the remaining 1 Tbsp oil. Add onion + carrots. Cook 8–10 minutes until soft and lightly golden.

    Add Garlic + Tomato Paste

    Stir in garlic + tomato paste. Cook 2 minutes until deepened in color.

    Deglaze

    Add broth. *(If you'd like, you can sub 1/2 c broth for red wine.) Scrape up browned bits and simmer 2–3 minutes until reduced.

    Build the Sauce

    Add the crushed tomatoes, vegetable broth, soy sauce/tamari, oregano + thyme, bay leaf, and balsamic vinegar. Return tofu to pan. Stir.

    Simmer

    Reduce the heat and simmer uncovered 25–30 minutes. Stir occasionally until thickened. Remove bay leaf. Taste + adjust salt/pepper.

    Cook Pasta

    Cook pasta according to package instructions. Reserve 1/2 c pasta water before draining.

    Finish + Serve

    Toss pasta with sauce. Add a splash of pasta water if needed. Top with optional breadcrumbs and fresh parsley.
