Pumpkin Spice Latte Cake Bars
Soft, moist cake bars infused with pumpkin, warm spices, and a subtle coffee kick -- like a pumpkin spice latte in dessert form. Easy to bake, easy to slice, and completely allergy-friendly.
Ingredients
- 1 cup pumpkin puree (not pie filling)
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 cup neutral oil (canola, avocado, or melted coconut oil)
- 2 tbsp strong brewed coffee (or 1 tbsp instant espresso dissolved in 2 tbsp hot water)
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tbsp cornstarch
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/2 tsp salt
Instructions
- 1Preheat and prep
Preheat the oven to 350 degrees F (175 C). Line a 9x9-inch pan with parchment paper.
- 2Mix wet and dry ingredients
In a large bowl, whisk pumpkin puree, brown sugar, granulated sugar, oil, coffee, and vanilla until smooth. In a medium bowl, whisk flour, cornstarch, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
- 3Combine and bake
Add dry ingredients to wet, stirring until just combined. Do not overmix. Spread batter evenly into pan. Bake 28-32 minutes, until edges are golden and center is set. A toothpick should come out with a few moist crumbs.
- 4Cool and slice
Let cool completely before cutting into 16 bars.
