Pumpkin Spice Latte Cake Bars

Ingredients

  • 1 cup pumpkin puree (not pie filling)
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup neutral oil (canola, avocado, or melted coconut oil)
  • 2 tbsp strong brewed coffee (or 1 tbsp instant espresso dissolved in 2 tbsp hot water)
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

    Preheat and prep

    Preheat the oven to 350 degrees F (175 C). Line a 9x9-inch pan with parchment paper.

    Mix wet and dry ingredients

    In a large bowl, whisk pumpkin puree, brown sugar, granulated sugar, oil, coffee, and vanilla until smooth. In a medium bowl, whisk flour, cornstarch, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.

    Combine and bake

    Add dry ingredients to wet, stirring until just combined. Do not overmix. Spread batter evenly into pan. Bake 28-32 minutes, until edges are golden and center is set. A toothpick should come out with a few moist crumbs.

    Cool and slice

    Let cool completely before cutting into 16 bars.
