Orange Olive Oil Snack Cake
A simple one-bowl snack cake made with olive oil, fresh orange juice, and warm spices, topped with a light citrus glaze. Moist, fragrant, and perfectly understated. Great for cozy afternoons with coffee or tea.
Ingredients
- For the cake: 1 cup granulated sugar
- 3/4 cup olive oil (light or regular, not peppery)
- 3/4 cup fresh orange juice
- Zest of 1 large orange
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- For the orange glaze: 3/4 cup powdered sugar
- 2-3 tbsp fresh orange juice
- Tiny pinch of salt (optional)
Instructions
- 1Preheat and prep
Preheat the oven to 350 degrees F (175 C). Line an 8x8-inch pan or grease a 9-inch round pan.
- 2Mix the batter
In a large bowl, whisk together sugar and olive oil until smooth. Whisk in orange juice, zest, and vanilla. Add flour, baking powder, salt, cinnamon, nutmeg, and ginger. Stir just until combined -- do not overmix.
- 3Bake
Pour batter into the prepared pan and smooth the top. Bake for 35-40 minutes, until the center is set and a toothpick comes out with a few moist crumbs. Let cool for 10-15 minutes.
- 4Glaze and serve
Whisk powdered sugar with orange juice until pourable but not thin. Drizzle over the warm cake and let it set naturally.
