Orange Olive Oil Snack Cake

Ingredients

  • For the cake: 1 cup granulated sugar
  • 3/4 cup olive oil (light or regular, not peppery)
  • 3/4 cup fresh orange juice
  • Zest of 1 large orange
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • For the orange glaze: 3/4 cup powdered sugar
  • 2-3 tbsp fresh orange juice
  • Tiny pinch of salt (optional)

Instructions

    Preheat and prep

    Preheat the oven to 350 degrees F (175 C). Line an 8x8-inch pan or grease a 9-inch round pan.

    Mix the batter

    In a large bowl, whisk together sugar and olive oil until smooth. Whisk in orange juice, zest, and vanilla. Add flour, baking powder, salt, cinnamon, nutmeg, and ginger. Stir just until combined -- do not overmix.

    Bake

    Pour batter into the prepared pan and smooth the top. Bake for 35-40 minutes, until the center is set and a toothpick comes out with a few moist crumbs. Let cool for 10-15 minutes.

    Glaze and serve

    Whisk powdered sugar with orange juice until pourable but not thin. Drizzle over the warm cake and let it set naturally.
