Flatbread with Whipped White Bean Spread & Roasted Mushrooms
This no-yeast herb flatbread with whipped white bean spread and roasted mushrooms is a vegan, nut-free, allergy-friendly recipe made with simple pantry ingredients. Savory, satisfying, and naturally high in protein and fiber, it’s perfect as a cozy dinner, side dish, or shareable snack.
Ingredients
- 8 oz mushrooms, sliced or torn
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp dried thyme
- 1½ cups all-purpose flour
- ½ tsp salt

- ½ tsp baking powder
- 2 Tbsp olive oil
- ¾ cup warm water
- 1½ cups cooked cannellini beans, drained and rinsed
- 2–3 Tbsp olive oil
- 1 small garlic clove
- Zest of ½ lemon
- 1–2 Tbsp lemon juice (to taste)
- ½ tsp salt
- ¼ tsp dried thyme
Instructions
- 1Roast the Mushrooms
Preheat the oven to 425°F (220°C). Toss mushrooms with olive oil, salt, and thyme. Spread on a baking sheet in a single layer and roast for 20–25 minutes, flipping once, until golden and slightly crisp at the edges. Set aside.
- 2Prepare the Flatbread Dough
In a bowl, whisk together flour, salt, thyme, and baking powder. Add olive oil and warm water, mixing until a soft dough forms.
- 3Knead & Divide the Dough
Turn the dough out onto a lightly floured surface and knead briefly until smooth. Divide into 4 equal pieces.
- 4Roll the Flatbreads
Roll each piece into a thin round, about ⅛-inch thick.
- 5Cook the Flatbreads
Heat a dry skillet over medium-high heat. Cook each flatbread for 1–2 minutes per side, until bubbles form and light golden spots appear. Stack and cover with a clean towel to keep warm.
- 6Whip the Lemon White Bean Spread
Add cannellini beans, olive oil, garlic, lemon zest, lemon juice, salt, and thyme to a food processor or blender. Blend until very smooth and creamy, scraping down as needed.
- 7Adjust Texture & Flavor
You’re looking for a thick, hummus-like consistency that spreads easily. Adjust with additional olive oil or lemon juice to taste.
