Caramelized Banana Crumble Skillet
This caramelized banana crumble skillet is one of those simple desserts that feels a little rustic and special at the same time. I wanted something warm and comforting that used up ripe bananas in a way my daughter could still enjoy safely with her food allergies. The bananas are cooked down until soft and caramelized, then topped with a crisp, golden crumble that bakes right in the skillet. It is the kind of dessert you can bring straight to the table and serve warm. It is completely dairy-free, egg-free, and nut-free, and works really well for an easy dessert on a weeknight or a low-effort treat when you want something homemade without much fuss.
Ingredients
- 4 ripe bananas
- 3 Tbsp brown sugar
- 1 Tbsp maple syrup
- 1 Tbsp lemon juice
- 1 tsp vanilla
- 1 tsp cinnamon
- Pinch salt
- 1 Tbsp flour
- ¾ cup rolled oats
- ½ cup all-purpose flour
- ⅓ cup brown sugar
- 1 tsp cinnamon
- ¼ tsp salt
- 5 Tbsp melted vegan butter or coconut oil
- ½ tsp vanilla
- 1 Tbsp granulated sugar
Instructions
- 1Preheat + Prep Your Skillet
Set oven to 375°F (190°C). Lightly grease or line your cast iron skillet with parchment.
- 2Make the Crumble Topping
In a bowl, mix the oats, flour, brown sugar, cinnamon, and salt. Add melted butter and vanilla. Stir until clumpy. Set aside.
- 3Coat the Bananas
Add sliced bananas to a bowl and sprinkle with brown sugar, maple syrup, lemon juice, vanilla, cinnamon, salt, and flour. Gently toss until bananas are evenly coated.
- 4Layer the Skillet
Spoon the bananas into an even layer in the bottom of the skillet. Pour the crumble evenly over the banana mixture.
- 5Add the Sugar Topping
Sprinkle the granulated sugar evenly over the top to give a crispy, caramelized finish.
- 6Bake
Bake 20–25 minutes until the topping is golden and the edges are bubbling.
- 7Optional Broil
For extra crispiness, broil 1–2 minutes, watching closely.
