Apple Pie Crumble Squares
Layered apple pie squares with a buttery shortbread crust, cinnamon-spiced apple filling, and oat crumble topping. Nut-free, dairy-free, and egg-free.
Ingredients
- 1 cup dairy-free butter, softened
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 2 cups all-purpose flour
- 1/4 tsp salt
- 4 medium apples (about 4 cups chopped), peeled and diced
- 2 Tbsp dairy-free butter
- 1/3 cup light brown sugar, packed
- 1 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1 tsp cornstarch mixed with 1 Tbsp water (slurry)
- 3/4 cup all-purpose flour
- 1/2 cup rolled oats
- 1/3 cup light brown sugar, packed
- 1/2 tsp cinnamon
- 1/4 cup dairy-free butter, melted
Instructions
- 1Prepare the crust
Preheat the oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper. In a medium bowl, cream together softened butter, granulated sugar, and brown sugar until smooth. Add flour and salt; mix until crumbly but pressable. Press firmly and evenly into the prepared pan. Bake for 12-14 minutes until just set.
- 2Cook the apple filling
In a medium skillet over medium heat, melt butter. Add apples, brown sugar, cinnamon, and nutmeg. Cook for 5-6 minutes until the apples begin to soften. Stir in cornstarch slurry and cook another 1-2 minutes until thickened. Remove from heat.
- 3Make the crumble topping
In a medium bowl, mix flour, oats, brown sugar, and cinnamon. Stir in melted butter until mixture forms clumps.
- 4Assemble and bake
Spread apple filling evenly over baked crust. Sprinkle crumble topping over apples. Bake for 30-35 minutes until the topping is golden and the filling is bubbling.
- 5Cool and cut
Cool completely before cutting into squares for clean slices.
