Apple Cider Soft Pretzels with Cider Glaze
Chewy, golden soft pretzels made with apple cider and drizzled with a sweet cider glaze. A fun allergy-friendly twist on a classic that tastes like apple cider donuts in pretzel form.
Ingredients
- For the dough: 1 1/2 cups warm apple cider (about 110F)
- 2 1/4 tsp instant yeast (1 packet)
- 1 Tbsp brown sugar
- 3 1/2 to 4 cups all-purpose flour
- 1 tsp salt
- 2 Tbsp neutral oil (avocado, canola, or melted vegan butter)
- For the baking soda bath: 10 cups water
- 2/3 cup baking soda
- Coarse sugar or cinnamon sugar for topping
- For the glaze: 1 1/2 cups powdered sugar
- 3-4 Tbsp warm apple cider
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
Instructions
- 1Make the dough
In a large bowl, combine warm apple cider, yeast, and brown sugar. Let sit for 5 minutes until foamy. Stir in flour, salt, and oil. Knead until smooth and elastic, 5-7 minutes.
- 2Let the dough rise
Place in a lightly oiled bowl, cover, and rise for 1 hour. Preheat the oven to 450F (230C). Line baking sheets with parchment.
- 3Shape and boil the pretzels
Punch down dough, divide into 12 pieces, roll each into a rope, and twist into pretzel shapes. Bring water and baking soda to a boil. Carefully dip each pretzel for 20-30 seconds, then place back on the sheet.
- 4Bake the pretzels
Sprinkle lightly with coarse sugar or cinnamon sugar. Bake for 12-14 minutes until deep golden brown.
- 5Glaze and serve
Whisk powdered sugar, cider, cinnamon, and vanilla until smooth. Drizzle or dip warm pretzels before serving.
