Apple Cider Soft Pretzels with Cider Glaze

Ingredients

  • For the dough: 1 1/2 cups warm apple cider (about 110F)
  • 2 1/4 tsp instant yeast (1 packet)
  • 1 Tbsp brown sugar
  • 3 1/2 to 4 cups all-purpose flour
  • 1 tsp salt
  • 2 Tbsp neutral oil (avocado, canola, or melted vegan butter)
  • For the baking soda bath: 10 cups water
  • 2/3 cup baking soda
  • Coarse sugar or cinnamon sugar for topping
  • For the glaze: 1 1/2 cups powdered sugar
  • 3-4 Tbsp warm apple cider
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla

Instructions

    Make the dough

    In a large bowl, combine warm apple cider, yeast, and brown sugar. Let sit for 5 minutes until foamy. Stir in flour, salt, and oil. Knead until smooth and elastic, 5-7 minutes.

    Let the dough rise

    Place in a lightly oiled bowl, cover, and rise for 1 hour. Preheat the oven to 450F (230C). Line baking sheets with parchment.

    Shape and boil the pretzels

    Punch down dough, divide into 12 pieces, roll each into a rope, and twist into pretzel shapes. Bring water and baking soda to a boil. Carefully dip each pretzel for 20-30 seconds, then place back on the sheet.

    Bake the pretzels

    Sprinkle lightly with coarse sugar or cinnamon sugar. Bake for 12-14 minutes until deep golden brown.

    Glaze and serve

    Whisk powdered sugar, cider, cinnamon, and vanilla until smooth. Drizzle or dip warm pretzels before serving.
